Purple sweet
This is a red onion and a sweet potato. Sometimes these are an orange colour inside, but this variety is white. The sliced onion and potato have just been roasted, on a sheet of baking paper, in a hot oven for half an hour. You only need a dash of oil because they won’t stick to the pan if you use the paper.
It’s certainly not a main course – nor a starter; hardly even something substantial on the side. But it’s a pleasantly sweet nibble to eat when you are feeling hungry and would otherwise be reaching for a chocolate biscuit.
